Ageing curve

The ageing curve is a graphical representation of a wine's perceived quality across its years of cellaring. It rises during the refining phase, reaches a plateau around peak maturity, then falls during decline. Its shape depends on grape variety, winemaking and vintage: some wines climb their curve slowly, others peak early. Sommeliers use it to plan the ideal moment for opening a bottle.
