Ageing potential

Ageing potential refers to the length of time a wine can evolve favourably in bottle before it begins to decline. It rests on the balance between acidity, tannins, alcohol and concentration of sugars or extract. A structured red grand cru may keep for several decades, whereas a light white loses its freshness quickly. Winemakers estimate this potential from tasting the young wine, though never with absolute certainty.
