Aspergillus Oryzae
A microscopic mould cultivated on rice to form koji, the central element of sake brewing. It secretes enzymes that convert rice starch into fermentable sugars, an indispensable step in the absence of malt. Recognised as Japan's national fungus, it also features in miso and soy sauce, and underpins the entire fermentation of nihonshu.
