Blind service
Blind service consists of presenting a wine without revealing its label, so the guest judges it on sensory merit alone, free of preconceptions about brand or vintage. Used both in training tastings and as a selling exercise, it sharpens attention and sometimes unmasks fine surprises at modest prices. The sommelier turns to it to broaden the horizons of a guest overly attached to a few familiar appellations.
