Bottle maturation


Bottle maturation is the ageing phase that follows bottling and unfolds in shelter, in an environment almost deprived of oxygen. The wine refines its structure, melts its tannins and develops tertiary aromas through slow reductive reactions. Unlike barrel ageing, this evolution occurs without any notable exchange with outside air. Its ideal duration depends on the ageing potential particular to each wine and each vintage laid down in the cellar.
