The bread ritual refers to the service provided from a cart or basket, where an attendant presents a selection of varied breads, from sourdough to baguette, from rye to flavoured fougasses. The guest chooses a piece, sliced or served whole, replenished throughout the meal. This service highlights in-house baking and the pairing between each bread and the dishes, the bread sometimes accompanied by several butters, including a salted one and a churned butter.
