Cachaça

Cachaça refers to the Brazilian spirit distilled from fermented sugarcane juice and the backbone of the caipirinha. Regulated by the Brazilian federal government, it is bottled between thirty-eight and forty-eight percent alcohol and comes unaged and clear or rested in wood, sometimes native timbers such as amburana. Frequently likened to rhum agricole, it stands apart through its yeasts, its aging woods and its distinct drinking culture.
