Calisson


Calisson refers to a boat-shaped Provençal confection made of almond paste, candied melon and candied orange peel, set on a wafer of unleavened bread and topped with a royal icing glaze. A speciality of Aix-en-Provence, it has held a Protected Geographical Indication since 2002. The specification requires at least 30 percent almonds in the paste and makes candied melon the dominant share of the candied fruit used in the recipe.
