Cast sugar
Cast sugar refers to a sugar-art technique in which sugar cooked to a high temperature is poured into moulds or onto a support and left to harden. It produces massive, transparent, solid elements, often used as bases or structural pieces in displays. Unlike pulled sugar, it is not manipulated by hand after cooking. Isomalt is frequently chosen for its superior hold and its glass-like clarity, which resists the clouding that plain sucrose can develop over time.
