Cellar darkness

Cellar darkness is the condition that protects wine from light during storage. Ultraviolet rays degrade certain compounds and cause lightstrike, a fault particularly feared in sparkling wines and whites. The tinted glass of bottles offers a first barrier, but a dark cellar remains essential for long keeping. Permanent lighting and direct sunlight are therefore avoided in storage areas so that the wine can age undisturbed by light.
