Ceviche
Peruvian cold dish of raw fish marinated in citrus juice, almost always lime, seasoned with salt, red onion, aji pepper and cilantro. The citric acid denatures the proteins and turns the flesh opaque without heat. Recognised as Peru's national dish and inscribed on UNESCO's Intangible Cultural Heritage list, it appears on the menus of Latin American palace hotels.
