Chablonner
Chablonner refers to spreading a thin layer of melted chocolate over a sponge or cake base to make it waterproof. Once set, this film isolates the pastry from the moisture of a creamy filling and makes the piece easier to handle. The process is used notably beneath entremets and tartlets, where it stops the base from softening and extends how long the dessert holds its texture.
