Clarified milk punch
Clarified milk punch refers to a mixture in which citrus acidity curdles milk, the curds trapping tannins and solids before filtration. The result is a clear, silky liquid that is remarkably stable over time. The method dates to the early eighteenth century, with a 1711 book by Mary Rockett giving one of the earliest written recipes, later recorded by Benjamin Franklin.
