Coating (napper)


Coating, or napper, refers to covering a preparation with an even layer of sauce, cream or jelly, or to reaching the coating consistency of a crème anglaise. A cream coats when it clings to and films the spatula, which corresponds to the nappe stage reached near 83 to 85 degrees. The term covers both the act of coating an item and the doneness point of custards.
