Cocktail clarification
Clarification refers to the range of processes that render a cocktail perfectly clear by removing suspended particles. Beyond milk clarification, contemporary bars use agar-agar, gelatine frozen then thawed, or centrifugation. The result alters texture and extends the drink's stability. Long a niche practice, the technique spread through high-end bars from the 2010s onward.
