Contrast pairing


Contrast pairing deliberately opposes the characters of a dish and a wine to create a balanced gustatory tension, the reverse of similarity pairing. The marriage of a sweet Sauternes and a salty Roquefort embodies this play, the sugar soothing the cheese's saline bite. When well controlled, this principle produces striking encounters that restaurant sommellerie often reserves for the cheese and dessert courses of a meal.
