Course timing
Course timing refers to the interval left between clearing one course and delivering the next. Neither too brief, which would hurry the guest, nor too long, which would break the meal's momentum, this space lets the table breathe and sometimes allows a refreshing interlude. Its command, coordinated between dining room and kitchen, governs the overall balance of a multi-course tasting menu and the guest's sense of unhurried pleasure.
