Direction of service
Direction of service refers to the convention governing which side staff present and clear dishes from. In classic plated service, food is served from the guest's left and cleared from the right, so the server never reaches across the diner. Beverages, by contrast, are poured from the right. This rule protects the guest's comfort and keeps floor staff moving smoothly and unobtrusively around the table.
