Double decanting


Double decanting involves pouring wine into a carafe, rinsing the original bottle, then returning the decanted wine to it for service. This manoeuvre combines the aeration produced by the two transfers with the separation of any deposit, while still allowing the original label to be presented at the table. It often suits young reds that benefit from breathing before service, without denying the guest the context of the vintage.
