Effect of sugar on wine
The effect of sugar on wine explains a cardinal dessert rule, a sweet dish makes a wine taste drier, more acidic and more tannic by contrast. A wine less sweet than the plate then seems thin and tart. The principle requires the wine to be at least as sweet as the dessert served, which steers the sommelier toward late-harvest, botrytised or fortified wines at the close of a meal.
