Fat-washing

Fat-washing refers to infusing a spirit with a melted fat, left to interact, then solidified by cold and removed. The liquid keeps the flavour of the fat without its texture, gaining a rounder mouthfeel. Bartender Don Lee, of the PDT bar in New York, popularised the technique around 2007 with the Benton's Old Fashioned, a bourbon washed with bacon fat.
