Fine strainer (double straining)
The fine strainer refers to a small fine-mesh sieve, of the kitchen type, used alongside the Hawthorne for double straining. The liquid passes through both strainers at once, holding back ice shards and particles of fruit or herb. The process ensures a clear, silky texture, sought for shaken cocktails served without ice, such as the Daiquiri or the Aviation.
