French meringue
French meringue refers to the simplest of the three meringues, made by whipping raw egg whites with sugar added gradually, without any prior cooking. It yields a mass that turns supple then firm according to the sugar added. Dried slowly in a low oven, it forms crisp shells, vacherins and dacquoise bases, though it stays more fragile than its Italian and Swiss counterparts used in fine pastry.
