Ganache emulsion


Ganache emulsion refers to the stable dispersion of the fat from chocolate within the water phase of the cream, achieved by pouring the hot liquid onto the chocolate in several additions. Working small circles at the centre with a spatula creates an elastic, glossy core, the sign of a successful emulsion. Done well, it yields a ganache that is smooth, supple and shiny, without splitting or greasy separation.
