Gelatin mass
Gelatin mass refers to powdered gelatin hydrated in advance in a precise quantity of water, generally five to six times its weight, then set into a gel before being melted and weighed out. This professional practice ensures an exact, consistent distribution of gelling power across mousses, cremeux and glazes. It avoids the dosing errors caused by the variable draining of gelatin sheets.
