Genever (jenever)

Genever, or jenever, refers to the ancestor of gin, a spirit from Belgium and the Netherlands built on a cereal mash called malt wine and flavoured with juniper. Protected as a European geographical indication, it splits into maltier oude styles and lighter jonge ones. Its rich texture, close to a young whisky, makes it a sipping spirit as much as a base for reinvented cocktails in Belgian and Dutch bars.
