Genshu

An undiluted sake, bottled without the addition of water after fermentation. Most sakes are cut to lower the strength from around twenty to fifteen or sixteen percent, but genshu retains its original power. Richer and more intense, it is often enjoyed over ice or in small amounts, forming robust pairings in refined dining.
