Injera
Spongy sourdough flatbread central to Ethiopian and Eritrean cuisine, traditionally made from teff flour, a tiny grain of the Ethiopian highlands. Its natural fermentation over two to three days gives it a sourdough-like tang and a porous surface. Laid as a large round on a shared platter, it serves as both plate and utensil for scooping up stews and vegetables in communal dining.
