Isomalt
Isomalt refers to a sugar substitute in the polyol family, derived from sucrose and codified E953 in Europe. Melting between 145 and 150 degrees Celsius, it is prized for sugar-art work because it absorbs moisture far less readily than sucrose. Cast, pulled or blown pieces therefore retain their gloss and near-glass transparency for longer, which makes isomalt a preferred material for durable showpiece decorations that must survive display under warm, humid conditions.
