Kimmeridgian Limestone

An Upper Jurassic geological formation dated to about one hundred and fifty-five million years, marked by grey-blue marls rich in small fossilised Exogyra virgula oysters. This subsoil, found at Chablis, holds a high proportion of active limestone that gives Chardonnay its saline minerality and tension. Its mention informs the sommelier of the origin of the Chablis style.
