Laminating butter


Laminating butter refers to a low-moisture butter with a high melting point, made to be layered into puff pastry. Its plasticity lets it spread without cracking or melting through successive folds, a condition for even lamination. Often standardised at around 84 percent fat, it forms the impermeable barriers that, during baking, hold back steam and push the dough layers apart into distinct flaky sheets.
