Layering
Layering refers to floating ingredients in distinct strata within a glass, achieved by exploiting their differences in density and sugar content. The heaviest liquid rests at the bottom, while the following ones are poured gently over the back of a bar spoon to prevent mixing. The Pousse-café and the B-52 illustrate this decorative technique, which demands patience and precise knowledge of densities.
