Length on the palate

Length on the palate refers to the duration over which aromas and taste sensation persist after tasting, once the wine has been swallowed or spat. Measured in caudalies, it separates deep wines from short ones and ranks among the major criteria for assessing quality. Long persistence generally signals sound concentration and achieved balance, whereas a brief finish often betrays a diluted wine or one lacking the underlying material for real depth.
