Manque cake tin


Manque cake tin refers to a round mold with smooth, slightly flared sides, taller than those of a tart tin, intended for soft cakes such as genoise and pound cake. Its sloping walls ease unmolding. Its French name is said to come from a failed genoise that a nineteenth-century Parisian pastry chef rescued by baking it in this tin, thereby creating the gateau manque.
