Muddling

Muddling refers to crushing ingredients at the bottom of a glass or shaker with a muddler, in order to release juice, essential oils or aromas. The pressure, gauged to avoid grinding bitter parts, draws out the freshness of mint leaves, lime wedges or fruit. The Mojito, the Caipirinha and the fruited Old Fashioned depend on this preparatory action.
