Napkin folding

Napkin folding is the art of shaping a table napkin into a decorative form set on the plate or to its left before the guests arrive. Classic repertoires count dozens of models, from the plain pocket to the fan, the lotus flower or the bishop's mitre. In fine hospitality the fold often favours restraint and a starched linen napkin, which the guest unfolds and lays across the lap at the start of the meal.
