Old Tom Gin refers to a lightly sweetened gin style that historically sat between the rich eighteenth century genever and the drier modern London Dry. Its gentle roundness makes it the original ingredient in classics such as the Tom Collins and the Martinez. Long absent from shelves, it was revived by the cocktail renaissance of the early 2000s, which prompted several distilleries to recreate archival recipes.
