Omakase

Omakase translates to "I'll leave it up to you", you hand the menu choice entirely to the sushi chef. This is the gold standard of sushi experiences, served at an intimate counter (usually 6-10 seats) where you watch the chef prepare each piece in front of you. What to expect: 15 to 25 pieces of sushi served one at a time over 60-90 minutes, no menu, fixed price (typically 150-500 EUR depending on the venue). Etiquette tips: eat each piece within 30 seconds of being served, use your fingers for nigiri (not chopsticks), don't drown the rice in soy sauce, and don't wear strong perfume. Tell the chef in advance about allergies or seafood you can't eat.
