Oxygenation


Oxygenation refers to the chemical reaction by which dissolved oxygen transforms a wine's phenolic compounds, shifting its colour and aromas. Beneficial when it softens a closed wine, it turns harmful once it tips into oxidation, bringing flat or maderised notes. Rapid aeration tools speed the process by breaking the liquid into fine streams, while service in the glass sustains it slowly within the bowl as the wine sits.
