Pavlova

Meringue-based dessert created in honour of the Russian dancer Anna Pavlova, its origin claimed by both Australia and New Zealand. A crisp meringue shell with a soft centre is topped with whipped cream and fresh fruit, often passion fruit, kiwi or berries. Light and airy, it closes meals in Oceanian palace hotels and tables of southern-hemisphere inspiration.
