Peking duck


Dish from Beijing prepared since imperial times, with its mature form dating to the Ming dynasty. The duck, air-dried then roasted in a closed or hung oven, has a thin, crisp skin. It is eaten with spring onion, cucumber and sweet bean sauce rolled in thin pancakes, the meat being carved before the diner. A ceremonial speciality served in Chinese palace hotels.
