A permaculture garden is a sustainable, self-regulating growing system that mimics natural ecosystems, companion planting, no-till soil, biodiversity, water harvesting, and zero synthetic inputs. Many premium hotels now feature working permaculture gardens that supply the restaurant directly. As a guest, you can usually request a garden tour (often free, 30-60 minutes) led by the head gardener or chef. What to expect: seeing dozens of plant varieties growing together rather than in tidy rows, learning about heritage seeds, and sometimes harvesting alongside the team. Wear closed shoes and bring sunscreen. Some properties offer hands-on workshops (seed-saving, composting) as part of wellness programming.
