Vietnamese noodle soup that emerged in the early twentieth century in the north of the country, around Hanoi. It rests on a beef or chicken broth long-simmered with charred ginger, onion, star anise, cinnamon and clove, ladled over flat rice noodles, thin slices of meat and fresh herbs. An emblematic national dish, it features in the refined Vietnamese cuisine of palace hotels.
