Pintxos


Small bites of the Spanish Basque Country, especially San Sebastián, typically set on a slice of bread and held by a wooden skewer that gives them their name (pintxo means spike). Elaborate and ever-changing, they range from simple tortilla to chef compositions of seafood or foie. Eaten standing at the bar with a glass of txakoli, they inspire the refined Basque cuisine of palace hotels.
