Plate service


Plate service, also called American service, refers to the act of fully composing the plate in the kitchen before carrying it finished to the guest, served from the right. Now the dominant mode in contemporary dining, it gives the chef full control of the presentation. In palace hotels, the waiter sets the plate with a precise gesture, often followed by a sauce nappage or a final touch performed before the guest.
