A pop-up restaurant is a temporary dining concept, running anywhere from one night to several months, usually featuring a guest chef, a unique theme, or an unusual location. At luxury hotels, pop-ups often feature internationally renowned chefs (especially from Japan, Spain, or Scandinavia) collaborating with the resident kitchen. What to expect: a fixed menu (no à la carte), prices often 30-50% above the hotel's regular restaurant, and limited availability (often 2-4 weeks of dinners with 20-40 seats per night). Booking opens 4-8 weeks ahead and often sells out within hours. Practical advice: sign up for the hotel's mailing list or concierge alerts to know when bookings open.
