Primary aromas
Primary aromas refer to the scents arising directly from the grape variety and the fruit, present before any transformation by fermentation or ageing. They gather the fruity, floral, vegetal and mineral notes proper to the variety and the terroir. Distinct from secondary aromas born of vinification and tertiary aromas of ageing, they dominate young wines and serve as a reference for identifying the grape variety during a wine's olfactory examination.
