Ramen

Japanese noodle dish of Chinese inspiration, made of alkaline wheat noodles served in a broth seasoned with an aromatic base (tare) of soy sauce, miso or salt. Topped with slices of pork (chashu), soft egg, bamboo shoots and seaweed, it varies by region (Sapporo with miso, Hakata with tonkotsu). Elevated to a culinary art, it inspires the contemporary Japanese cuisine of palace hotels.
