Sable pastry
Sable pastry refers to a sweet dough rich in butter and sugar, made by the rubbing method, which yields after baking a crumbly, melting texture recalling shortbread. More fragile and tender than sucree pastry, it forms the base of thin tart shells and biscuits. The high fat content and the rubbing method limit gluten, giving the characteristic sandy crumble on the palate.
