Sashimi


Japanese preparation of raw fish or seafood, precisely sliced and served without rice, accompanied by soy sauce, wasabi and pickled ginger. Quality rests on the choice of raw material, the sharpness of the knife and the angle of the cut (varying with the flesh), which reveal texture and freshness. Distinct from sushi, it attests to the refinement of Japanese cuisine served in palace hotels.
